The default associations are in ~/Library/Preferences/com.apple.LaunchServices.plist

The per-file associations are in the metadata of the file itself. However, Apple has discontinued support for type/creator codes in Snow Leopard, so you can no longer get the old behavior that a file always opens with the app that created it. As far as I know, there is no way to reliably set the file association of an individual file to something other than the default app unless you use the Finder get info dialog (well, you can use automator or applescript, but these just script the Finder).
